Place the parsley, olive oil, red wine vinegar, oregano, cumin, salt, garlic and hot pepper sauce into the container of a blender or food processor. Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. Fill a blender or food processor with the cilantro and parsley leaves.

Steps to make Chimichurri Sauce:
  1. Put all of the ingredients into a food processor (you can also use a blender) and blend. Blend until the garlic is very fine.
  2. Taste it and add salt and red chili pepper as desired. Transfer it to a glass bowl and then let it rest at room temperature for 2-3 hours for the flavors to blend.
  3. Italian parsley is quite fluffy so push it down firmly to make the 1 cup serving.
  4. You can add a small amount of finely chopped onions and lemon juice if you'd like. You can also add some squeezed lime juice, which is also delicious.

Stir in cilantro, parsley, and oregano. Using a fork, whisk in oil. Chimichurri is an uncooked sauce made with finely-chopped herbs, garlic, oil and vinegar. (Here's how to keep those herbs fresh.) The sauce originates from Argentina and Uruguay, where it is traditionally used to dress grilled meats. Usually paired with meat, chimichurri sauce plays off of grilled bass just as beautifully, as long as you use a light vinegar like champagne or rice wine, rather than balsamic. Chimichurri is an Argentinian uncooked herb sauce.
